  5. Turn the heat down to medium-low and sauté the minced garlic in the pan for 30 seconds. Add the orange juice, honey, tamari, thyme and arrowroot slurry. Whisk the ingredients together for 1-2 minutes or until slightly thickened.
  6. Add the salmon back to pan and spoon glaze over salmon before serving.

  • 1 tbsp instant espresso coffee granules
  • 1/4 cup Kahlua

FROSTING

  • 1/2 cup unsalted butter, room temperature
  • 4 cups powdered sugar
  • 2 1/2 tbsp Kahlua or espresso
  • 1/2 cup mascarpone cheese, room temperature


INSTRUCTIONS

  1. Preheat oven to 350 degrees and prepare a cupcake pan with cupcake liners.
  2. Beat butter and sugar until light in color and fluffy, about 2-3 minutes.
  3. Add vanilla extract and sour cream and mix until well combined.
  4. Add egg whites in two batches, mixing until well combined.
  5. Combine dry ingredients in another bowl, then combine milk and water in another bowl.
  6. Add half of the dry ingredients to the batter and mix until well combined. Add the milk mixture and mix until well combined. Add remaining dry ingredients and mix until well combined.
  7. Fill cupcake liners about halfway. Bake for 15-17 minutes, or until a toothpick inserted comes out with a few crumbs.
  8. Remove cupcakes from oven and allow to cool for 2-3 minutes, then remove to cooling rack to finish cooling.
  9. While cupcakes cool, make the filling. Combine egg yolks and sugar in the top of a double boiler, over boiling water. If you don’t have a double boiler, you can use a metal mixing bowl set over a pot with simmering water in it.
  10. Cook for about 6-8 minutes, with heat on low, stirring constantly, or until mixture is light in color and sugar is dissolved. If mixture starts to get too thick and a darker yellow, it’s overcooked.
  11. When done, whip yolks with mixer until they thicken and yellow a bit.
  12. Fold mascarpone cheese into whipped yolks.
  13. Add heavy whipping cream to another mixer bowl and whip until stiff peaks form, about 5-7 minutes.
  14. Fold whipped cream into mascarpone mixture.
  15. In another small bowl, combine warm water, espresso and Kahlua.
  16. Once cupcakes are cool, cut out the centers. I use a cupcake corer.
  17. Drizzle about 1 tbsp of the espresso mixture over the inside of the holes of the cupcakes, then fill in the holes with the tiramisu filling.
  18. To make the frosting, beat the butter until smooth.
  19. Add 2 cups of powdered sugar and 1 tbsp of Kahlua and mix until smooth.
  20. Add another cup of powdered sugar and remaining Kahlua and mix until smooth.
  21. Carefully fold in the mascarpone cheese.
  22. With mixer on low speed, add the remaining cup of powdered sugar and mix just until smooth. You don’t want to over mix the msacarpone cheese or it could become too thin.
  23. Pipe the frosting onto the cupcakes and sprinkle with some cocoa and top with chocolate covered espresso beans, if desired.
  24. Store in the refrigerator. When ready to serve, I recommend letting them sit out for 20-30 minutes, so they aren’t too cold and firm.

  6. While the rice and roasted vegetables are cooking, prepare the remainder of the buddha bowls. Defrost the edamame beans (I usually do this by soaking in boiling water for a few minutes).   7. Make the dressing by whisking together all of the dressing ingredients listed above. You can add some water to thin out the dressing as needed.
  8. Once the rice and vegetables are cooked, assemble the buddha bowls. Divide the rice and all of the vegetables evenly between two bowls. Drizzle over the dressing, and then garnish with coriander, chilli flakes and seeds as desired.

  2. In a large nonstick skillet, add 1 tbsp sesame oil and bring to medium-high heat. Add in crumbled tofu and cook until all moisture is evaporated and tofu is lightly browned on the exterior. 
  3. Stir in water chestnuts and mushrooms and cook until chestnuts and mushrooms are cooked.
  4. Reduce heat to medium. Pour in sauce and stir into ingredients until ingredients are evenly coated in sauce. If ingredients are getting dry, add a few tbsp of water. Cover skillet with lid to cook a few minutes and allow ingredients to absorb sauce. Remove lid, taste and make any adjustments as needed. If you prefer a little sweeter, you can add a little bit of brown sugar. If you prefer saltier, you can add a little more soy sauce. When finished, remove from heat.
  5. Stack a few lettuce leaves on one side of your meal prep container. Place some scallions on the top lettuce stack. Add tofu filling to the other side of your container. Seal containers and store in fridge. When ready to eat, remove stack of lettuce leaves and scallions. Heat the filling. Then assemble your lettuce wraps.

Ingredients

  • 8 oz cream cheese
  • 1 1/2 cups unsalted butter
  • 3 cups flour
  • 20 Ferrero Rocher candies cut in pieces
  • powdered sugar for dusting


Instructions

  1. In a mixing bowl, whisk butter with cream cheese until it turns fluffy. 
  2. To the cookie mixture add in flour and whisk to combine together. Place the dough in a plastic wrap. Let it rest in a fridge for at least an hour. 
  3. Roll out the rested dough and cut it into even squares. Place the Ferrero Candy in the middle and fold over the sides, pinching the corners together. (You can also use whisked egg to seal corners)
  4. Bake cookies at 350F for 15 minutes. Once the cookies cool, dust the cookies with powdered sugar.

Instructions
For the pulled pork:
  • Place pork in the slow cooker
  • Season meat with salt and pepper
  • Pour in chicken stock and balsamic
  • Cover and cook on low for 6-8 hours or until pork pulls apart easily
  • Remove from slow cooker and shred

For the pineapple coleslaw:
  1. Add cabbage to a large bowl
  2. Prepare the pineapple salsa if making it yourself
  3. Add pineapple salsa to the bowl
  4. Add oil, vinegar, mayo
  5. Stir to combine so that coleslaw is evenly mixed
  6. For best results, refrigerate an hour prior to serving to let the flavors combine
